Basic Tomato Sauce

This sauce can be used as is or modified for pasta, meatballs or pizza sauce.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 cup grated onion
  • 1 grated green bell pepper
  • 4 cloves garlic, chopped
  • 1 (28 ounce) can tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt to taste

Directions

Heat the olive oil in a sauce pot over medium heat. Cook the onion and bell pepper in the oil until translucent. Add the garlic and cook and stir another 2 to 3 minutes. Stir in the tomato sauce and herbs. Season with salt and pepper. Cook until another 2 to 3 minutes. Reduce heat to simmer, put a lid on the pot and cook for 30 minutes – 2 hours. The longer it can simmer the better. You may have to add a bit of water if it reduces too much.

Serves about 6
