Creamy Alfredo Sauce

06.25.09 | Comment?

Who doesn’t love Alfredo sauce? WARNING: THIS IS NOT LOW FAT BUT IT IS HIGH IN GOODNESS!

  • 4 tablespoons butter
  • 1 clove garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups heavy cream
  • 1/2 cup milk
  • 1 cup Parmesan cheese
  • parsley for garnish

Heat the butter in medium saucepan over medium heat. Add the garlic and cook for about 1 minute until fragrant but not brown. Add the flour and whisk until smooth. Gradually add the cream and milk and whisk until mixture begins to thicken and bubble. This can be tricky as with all Béchamel type sauces so when adding the milk, go slowly and don’t stop whisking until it has thickened. Remove from heat and add the Parmesan and stir gently.

Toss with your favorite cooked pasta.

Serves about 6
