Garlic Roasted Potatoes

I make these A LOT! We love them and they are really versatile. You can add or change seasonings and give them a whole new flavor.

Ingredients

  • 6 Medium red potatoes (chopped into about one inch pieces)
  • 4 cloves of minced garlic
  • 1 tbs cumin
  • 1 tbs garlic powder
  • 1 tbs oregano
  • 1/4 cup olive oil
  • 2 ts black pepper
  • kosher salt to taste

Directions

Mix the spices, garlic and oil together in a large bowl until blended well.  Coat the potatoes with the mixture and place them in an even layer in a glass baking dish. I usually par-boil the potatoes for the sake of time but they taste just as good. Make sure not to over boil them though as they will get soft and fall apart. Bake in a 350 degree oven for 40 mins or so (20 if you par boiled the potatoes) or until you can easily pierce them with a fork.
